Good balanced meal... using curry for the chicken.

Recipe Ingredients for Chicken Stirfry

1/2 cup brown rice
15 oz chicken
1/2 red pepper
1/2 yellow pepper
8 oz kale
2 cloves garlic
4 carrots

Recipe Directions for Chicken Stirfry

  1. Chop chicken into bite-sized pieces.

  2. Chop remainder of vegetables, including kale (without stems)

  3. In large frying pan, saute garlic, then add chicken (marinaded in either curry sauce or peanut satay sauce

  4. When chicken is well browned, add peppers and carrots.

  5. Cook until vegetables are slightly softened, then add cooked brown rice and stir.

  6. Add kale last, covering to let it steam.
