Recipe Ingredients for Chicken Stir-Fry with Vegetables

9 ozs chicken breasts, skinned
1 egg white, beaten
1 cup sugar snap peas
1/4 cup peas
1 tbsp cornstarch
1/2 cup low-fat, reduced-socium chicken broth
1/2 cup sliced mushrooms
1/2 green pepper, diced
1/2 red pepper, diced
1/4 onion, diced
1 tbsp lite soy sauce

Recipe Directions for Chicken Stir-Fry with Vegetables

  1. Flatten chicken breasts and cut into bite-size pieces.

  2. Place chicken in bowl. Add egg white and cornstarch. Stir thoroughly. Let sit for 10 minutes.

  3. Dice peppers, onion, mushrooms.

  4. Heat the broth in wok or non-stick pan. Add chicken and stir-fry until it turns opaque. Remove the chicken and place aside.

  5. Add mushrooms to work or pan and stir-fry. Add all other vegetables and soy sauce. Cook for about 2 minutes.

  6. Boil rice.

  7. Add chicken to vegetable and cook for 2 minutes.

  8. Serve chicken and vegetables over rice.
