Serves 4 as a lunch/light meal and 3 for a full on dinner

Recipe Ingredients for Chicken Stir fry

300 g chicken breast
1 large onion
1 large bell pepper
25 g fresh ginger
1 chili pepper
4 cloves garlic
100 g mushrooms
200 g spring greens
2 scallions
1/2 tbsp olive oil
2 tbsp soy sauce
1/2 tbsp mirin
1/2 tbsp fish sauce

Recipe Directions for Chicken Stir fry

  1. Chop all the veg and grate the ginger and garlic together.

  2. Gently fry off the ginger, garlic and chili for 2 minutes. Add the chicken to seal it then add all the veg and any star anise (if you have it), minus the spring onions, and add all the sauces.

  3. Cook for about 10 minutes and scatter with the spring onions
