Chicken Stir Fry based on Mark Bittman's recipe.

Recipe Ingredients for Chicken Stir Fry

0.5 cup, chopped Carrots
1.5 cup, pieces or slices Mushrooms
2 cup, chopped Broccoli
3 tsp Ginger Root
1 cup, chopped Onions
0.5 cup, chopped Peppers, Sweet, Green
0.5 cup, chopped Peppers, Sweet, Red
6 clove Garlic
2 cup, chopped or diced Chicken, Thigh, Meat Only
0.5 serving Hoisin Sauce Asian Specialty Sauce
2 tbsp Soy Sauce
0.07 cup Cornstarch
0.25 cup Organic Chicken Cooking Stock
1 tbsp Olive Oil
1 tbsp Olive Oil

Recipe Directions for Chicken Stir Fry

  1. Microwave the carrots and broccoli with a few tablespoons of water for 3 minutes to take the raw off.

  2. Heat oil in wok, and add ginger and garlic, swirling to heat. Let it cook just until you can smell it.

  3. Add the onions and peppers, and cook for 2 or 3 minutes.

  4. Add the broccoli and the carrots, and cook for another 5 minutes.

  5. If you're using raw chicken, remove the vegetables from the wok and cook the chicken in the juices left from the vegetables. When cooked through, return the vegetables to the pan and continue with the instructions at the addition of the soy sauce.

  6. If you're using leftover chicken, add it to the vegetables and allow it to heat through.

  7. Add the soy sauce to the pan, and mix it in. Mix the cornstarch with the chicken stock, and add it to the pan with the hoisin. Heat through, and reduce any liquid.

  8. Serve over brown rice.
