4 red peppers
1 onion
2 tablespoon canola oil
1 salt and pepper to taste
1/2 cup vegetable broth

  1. Heat oil in large pan

  2. add onion cook until tender

  3. add red peppers cook until tender

  4. bake chicken in oven until done

  5. transfer to pan for quick fry

  6. serve over rice or spaghetti
