Chicken Stir Fry. Serve over 1/2 cup of brown rice. This recipe makes a large serving of vegetables and chicken for those with large appetites at a small calorie level.

Recipe Ingredients for Chicken Stir Fry

1 cup chicken tenders
1 onion
5 stalks celery
7 mushrooms
2 cups bean sprouts
1 bell pepper
1 small zucchini
1 cup pea pods
1 cup cabbage
1/4 cup soy sauce
3 tbs teryaki sauce

Recipe Directions for Chicken Stir Fry

  1. Cut the chicken tenders into small pieces and marinate with soy and teriyaki sauce

  2. Chop all of the vegetables into medium sized pieces

  3. Spray the inside of a cast iron skillet with Pam

  4. Add the chicken and marinade into the pan and cook until the chicken is no longer pink

  5. Add the onions, celery, pepper, and peas to the pan and toss with the chicken

  6. Let this cook until the onions are translucient

  7. Add the zucchini and mushrooms to the pan and allow to cook until the zucchini is soft

  8. Add the sprouts to the pan and toll with the other vegetables and chicken

  9. Cover and allow to steam for 5 minutes
