Recipe Ingredients for Chicken stir fry

1 pound chicken breast
1 red bell pepper
2 tbsp peanut oil
3 cloves garlic
1/4 cup green onion
2 cups broccoli
1/4 cup sugar snap peas
1/8 cup rice vinegar
1/2 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
1/2 tsp crushed red pepper
1/2 cup basmati rice
1/4 cup water

Recipe Directions for Chicken stir fry

  1. Mix water, vinegar ginger, nutmeg, and cinnamon in a deep bowl for a marinade.

  2. Dice chicken into 1/2" pieces and soak in marinade ~1 hour

  3. Begin cooking rice in rice cooker according to the directions.

  4. Chop red pepper, onion, broccoli, green onion.

  5. Strain chicken to a bowl and save the marinade.

  6. Heat peanut oil in a wok to a medium heat and carefully add chicken. Increase heat and fry that bird quick.

  7. Remove the chicken a set aside.

  8. Get them veggies in the wok, starting with broccoli, and fry them about 3-5 minutes while adding the marinade small amounts at a time.

  9. Stir in the chicken and fry the mess about 3 more minutes.

  10. Remove from heat and let sit a minute, or two.

  11. Serve over rice.
