If you prepare all the ingredients before you start cooking, this easy stir fry is ready in a snap. Substitute whatever vegetables you have on hand and serve over white or brown rice.

Recipe Ingredients for Chicken Stir Fry

1 1/2 pounds chicken tenders, cut in 1 inch pieces
1 tablespoon olive oil
1 cup sliced carrots
1 cup sliced celery
1 tablespoon garlic, minced
2 cups broccoli florets
1 red pepper, sliced
1/4 cup soy sauce
1/2 cup water
2 tablespoons cornstarch
2 tablespoons sesame seeds
1/4 cup green onions, sliced

Recipe Directions for Chicken Stir Fry

  1. In a non stick pan over medium heat, cook carrots, celery and garlic until they begin to soften.

  2. Add chicken breast and cook until no longer pink, about 7 minutes.

  3. Add sliced red pepper and broccoli and stir and cook about 2 minutes more.

  4. Meanwhile combine soy sauce, water and cornstarch and stir until smooth. Pour over chicken and vegetables and stir until sauce thickens.

  5. Sprinkle sesame seeds on top and serve over rice or noodles.
