Chicken and Vegetables--serve over rice

Recipe Ingredients for Chicken Stir Fry

2 boneless, skinless chicken breast
4 tbsp flour, divided
1 tbsp soy sauce
1/4 tsp ground ginger
1/4 tsp garlic powder
2 tbsp cooking oil, divided
1 1/2 cup broccoli
2 tbsp onion
1/2 cup green beans
1/2 medium zucchini
1 cup water
1 chicken bouillon cube

Recipe Directions for Chicken Stir Fry

  1. Cut chicken into bite size pieces and place in a resealable plastic bag.

  2. Add 1 1/2 tbsp flour and toss to coat.

  3. Combine soy sauce, garlic, and ginger, add to bag, and shake well. Refrigerate for at least 30 minutes.

  4. In a large skillet or wok, heat 1 tbsp oil, and stir fry chicken until no longer pink, then remove and keep warm.

  5. Add remaining oil, and stiry fry vegetables until crisp-tender.

  6. Add water and bouillon cube, and return chicken to pan.

  7. Cook and stir until thickened and bubbly.

  8. Add the extra flour slowly if necessary to help thicken.
