Delicious Chicken Stir-fry, high in fibre and protein.

Recipe Ingredients for Chicken Stir fry

1/2 cup Orange Juice
1/3 cup Peanut Sauce
2 tbsp. low sodium soy sauce
1 1/2 tbsp. Cornstarch
1 tbsp. Gingerroot, grated
1 tbsp. Sesame Oil
1 tsp. garlic, minced
1/4 tsp. Red Pepper Flakes, crushed
1 1/2 cups Chicken Breast, cubed
1 cup Broccoli Florets
1/2 cup Frozen Peas
1 cup Cauliflower Florets
1/3 cup Green Onions, Chopped
1/4 cup Water
1 tbsp. Dried Basil
8 oz. Whole Wheat Rotini, uncooked

Recipe Directions for Chicken Stir fry

  1. Cook pasta according to directions, set aside.

  2. Combine Sauce ingredients in a medium bowl. Set aside.

  3. Spray a large Wok with PAM, and chicken, heat until no longer pink in centre. Add Vegetables, stir and cook until crisp, (about 6 minutes). Add Water. Add Peas and Onions. Cook one more minute.

  4. Add Sauce and Basil. Cook until bubbling and thick.

  5. Add Rotini and cook 1 minute until rotini cooked through.

  6. Serve.
