chicken breast simmered in chicken broth with leeks, onion, potato, tomato, garlic, red and green peppers. serve over rice or on a tortilla.

Recipe Ingredients for Chicken Stir-fry

1 lb. chicken breasts
1/2 c. onion
1/2 c. leek, chopped
1/4 c. green pepper
1/4 c. red pepper
1 c. kidney beans
1 large potato
2 tsp cumin
2 tsp red pepper powder
3/4 c. corn
2 cloves garlic
1/4 c. tomato
1 c. chicken broth

Recipe Directions for Chicken Stir-fry

  1. sautee minced garlic, leeks, onion, peppers and potato together until garlic is browned and onions and peppers and leeks are softened.

  2. add in chicken broth, chicken breasts, tomato, kidney beans and corn. sprinkle spices over and turn chicken periodically.

  3. simmer until chicken is done, about 30 minutes and shreds easily. tear apart in pan and mix about. serve
