A quick and easy chicken stir fry.

Recipe Ingredients for Chicken Stir fry

2 tbsp olive oil
2 breasts of chicken, cut into strips
6 mushrooms, chopped
1 red bell pepper, chopped
1 large onion, chopped
2 tbsp reduced sodium soy sauce
2 tbsp orange juice
2 tsp brown sugar
2 tsp lemon juice
1/4 tsp tabasco sauce
2 cloves garlic, minced
1 tsp ginger root, grated
2 tsp cashew nuts, crushed
200 g egg noodles

Recipe Directions for Chicken Stir fry

  1. In a bowl mix together the soy sauce, orange juice, brown sugar, lemon juice, tabasco sauce, garlic and ginger. Add the chicken pieces.

  2. Heat the olive oil in a wok until very hot, almost smoking- then add the chicken mixture. Stir fry for two- three minutes.

  3. Add the mushrooms, pepper and onion and continue to str fry for two to three minutes, then add cashew nuts.

  4. Meanwhile, prepare the egg noodles by boiling in water for three or four minutes.

  5. Serve noodles in a bowl topped with stir fry mixture.
