Recipe Ingredients for Chicken Stew with Rosemary Dumplings

2 tbls oil
1 1/2 pound chicken breast, boneless and skinless
4 large carrots, peeled cut in 1/4 inch slices
2 celery stalks, cut in 1/4 inch slices
1 medium onion, diced
2 tsp baking powder
1 1/2 teaspoons fresh rosemary, chopped
1 cup flour
2 tbls flour
1 1/4 tsp salt
1 1/2 cups milk
1 large egg
14 1/2 ounces vegetable broth
1/4 tsp pepper
10 ounces peas, frozen

Recipe Directions for Chicken Stew with Rosemary Dumplings

  1. heat 1 tbls oil over medium heat. Add half chicken and cook until lightly browned, 8-10 minutes. Transfer to bowl, repeat with remaining

  2. Add remaining oil and add carrots, celery, and onion, cook, until vegetables are browned and tender about 10 minutes

  3. Meanwhile, prepare dumplings. In small bowl, mix baking powder, rosemary, 1 cup flour and 1/2 tsp salt. In cup mix milk and egg. Stir milk mixture into flour mixtureuntil just blended

  4. Return chicken, add chicken broth, pepper remaining salt, 2 cups water. Heat to boiling. Drop dumpling mixture by rounded tabls on top of chicken. Cover, reduce heat to low and simmer 15 minutes

  5. Remove dumplings, chicken and vegetables

  6. In cup, mix remainign 1 cup milk and remaining 2 tbls flour until blended, stir into broth. Heat to boiling, boil 1 minutes to thicken slightly. Add peas and heat through. Return dumplings, chicken and vegetable.
