Recipe Ingredients for Chicken Stew

1.5 breast, bone and skin removed Chicken, Breast, Meat Only
14.5 oz Stewed Tomatoes, Original Recipe
14.5 oz Diced Tomatoes
1 cup Rice, White, Long-grain, Regular, Cooked
3 cup, chopped Broccoli
2 medium raw Carrots
32 oz Chicken Broth
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 cup, chopped Peppers, Sweet, Red
1 small Onions
3 medium (4-1/8" long) Onions, Spring Or Scallions
2 clove Garlic
1 serving Extra Virgin Olive Oil
0.5 cup, chopped Peppers, Sweet, Green

Recipe Directions for Chicken Stew

Roast three boneless chicken breast halves seasoning as desired for 25 min. @ 400 degrees. Meanwhile, saute veggies in 1 tbs EVOO and 2 tbs water until tender/crisp. Add all other ingredients and simmer 5 min. Cube cooked chicken and add to stew. Simmer 5 more mins. and serve.
