This is traditional Cameroonian chicken stew. It is made with tomato sauce rather than broth and served over white rice. You also add other spices I didn't put in the recipe. Blend together garlic, onions, green peppers, celery, and ginger. It doesn't really matter how much of each you use. It is a spice that is always added to meats and most dishes, at least when we make them.

Recipe Ingredients for Chicken Stew

3 lb Chicken cut into pieces
2 1/2 tbs vegetable oil
2 small tomatoes
1 large tomato
2/3 c water
1 1/2 tsp Italian seasoning
1 salt to taste

Recipe Directions for Chicken Stew

  1. Skin the chicken and cut it into pieces. Cut the breasts into thirds and the wings in half.

  2. Saute onions and tomatoes in the oil.

  3. Add the tomato sauce and Italian seasoning and some seasoning salt.

  4. When the tomato sauce no longer tastes sour, add the chicken pieces.

  5. Cook until done.
