Cooks Illustrated: Hearty chicken Stew

Recipe Ingredients for Chicken Stew

3 lbs. chicken (thighs with bone in)
2 tbsp. olive oil
2 onions medium
4 garlic cloves
1 tsp thyme
3 tbsp. flour
1/2 cup white wine
3 1/2 cup chicken broth
1 lb. carrots
1 1/2 lbs. red potatoes
1 cup peas
1/4 cup parsley

Recipe Directions for Chicken Stew

  1. Adjust oven rack to lower-middle positions & heat oven to 300 degrees. Pat chicken dry with paper towels and season with salt & pepper. Heat 1 tbsp oil in large Dutch oven over medium-high heat until just smoking. Add half of chicken and brown on both sides, 5-8 min., reducing heat if pot begins to scorch. Transfer chicken to medium bowl. repeat with remaining 1 tbsp oil and remaining chicken; transfer to bowl. When chicken is cool enough to handle, remove and discard skin.

  2. Pour off all but 2 tbsp. of fat left in pot & place over medium heat until shimmering. Add onions and 1/4 tsp. sale & cook, stirring often, until softened, 5-7 min. Stir in garlic and thyme and cook until fragrant, about 30 seconds. Stir in flour and cook, stirring constantly, until golden, about 1 min. Slowly whisk in wine, scraping up any browned bits. Gradually whisk in broth until smooth and bring to simmer.

  3. Add chicken with any accumulated juices, carrots, potatoes, and bay leaves and bring to simmer. Cover, place pot in oven, and cook until chicken is very tender but not quite falling off bone, about 1 1/4 hrs.

  4. Remove pot from oven, transfer chicken to cutting board, and remove bay leaves. When chicken is cool enough to handle, remove meat from bones & shred into large pieces; discard bones.

  5. If sauce is too thin, continue to simmer stew over medium-high heat as needed to thicken. Off heat, stir in shredded chicken and peas, cover and let stand for 5 min. Stir in parsley and season with salt & pepper to taste before serving.
