A tasty and light chicken stew. You can adapt this recipe by adding any vegetables you like.

Recipe Ingredients for Chicken Stew

16 ounces chicken breast
28 ounce tomatoes, diced
3 stalks celery, chopped
2 carrots, chopped
1/2 medium onion, diced
1 large potato, chopped
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon chili powder
15 1/4 ounce whole kernel corn

Recipe Directions for Chicken Stew

Boil chicken breasts for 45 minutes. Take out the chicken. Add onions, celery, tomatoes, carrots, and potatoes to the boiling water/broth. Cook for 45 minutes or until the vegetables are tender. Cut chicken breasts into bite size pieces and add to stew along with the corn. Season with salt, pepper, and chili powder. Cook an additional 5 minutes.
