Great with whole wheat dumplings on a cold winters day. I modified the Irish Chicken and Dumpling Stew Recipe by using broth and gravy packet instead of cream of chicken soup.

Recipe Ingredients for Chicken Stew

2 breasts, chicken
1 pound chicken, dark meat, 4 thighs
3 cups Chicken broth, Reduced Sodium
3 cups water
2 onions, quartered
1 cup celery, chopped
5 carrots, sliced
8 oz peas
2 potatoes, quartered
2 tablespoon fresh herbs, poultry mix
7 g Gravy, Turkey, Dry
1 pepper to taste

Recipe Directions for Chicken Stew

  1. In large pot, combine broth, water, chicken celery, onions, herbs, and pepper. Cover and cook over low heat for about 1.5 hours. Add potatoes and carrots, cover and continue cooking for 30 minutes.

  2. Remove the chicken and remove from bone. Diced or shred meat and return to pot.

  3. Add peas and cook another 10 minutes.

  4. Add dumplings now, if desired. Pick your favorite dumpling recipe. I used the whole wheat recipe on Calorie Count that I really liked.
