A delicious hearty stew made with fresh vegetables and chicken breast. Use more or less of each ingredient to taste. Substitute other squashes if chayotes are unavailable.

Recipe Ingredients for Chicken Stew

2/3 c. vegetable broth
2 stalks celery
1/2 yellow onion
2 chayotes
3 large carrots
1.34 lbs chicken
1/2 c. raisins
1 tbsp. minced garlic
2 tbsp. tarragon
2 tbsp. black pepper
1 tbsp. crushed red pepper
1 tsp. anise seed
1 tbsp. oregano
2 tbsp. basil
2 tbsp. rosemary

Recipe Directions for Chicken Stew

Chop vegetables and chicken into bite size pieces. Combine all ingredients in slow cooker, and cook on high for 3 hours. Reduce heat to low and allow to cook 1-2 additional hours. Serve alone or with rice, bread, or pasta.
