Recipe Ingredients for Chicken Stew

750 g
3 c
1 can cream of potato soup
1 can cream of chicken soup, light, low sodium
3 celery stalks
2 c broccoli, chopped
15 baby carrots, cut into chunks
3/4 tsp poultry seasoning
1 tsp parsley
1 1/2 tsp onion flakes

Recipe Directions for Chicken Stew

  1. Put boneless, skinless chicken thighs in a pot, add chicken broth, and simmer, covered for approx. 25 mins, or until chicken easily pulls off of the bone.

  2. Reserve 1 c cooking liquid, drain thighs, and allow to cool.

  3. Add chopped veggies, spices and dehydrated onion to remaining stock in the same pot. Add both cans of soup, and the chicken that you have now shredded.

  4. Allow to cook on low heat for approx. another 25 mins.

  5. If you would like to add dumplings, an easy way is to use refrigerator rolls, place them on top of the stew for approx. 20 mins, covered so they plump up and cook. You can also, if your pot is oven safe, put the entire pot into the oven for a few minutes to bake the top of the biscuits right onto the stew.
