Add your own blend of herbs and spices to liven ups this colorful and hearty stew. I use garlic, Mrs. Dash and various season salts.

Recipe Ingredients for Chicken Stew

14 ounces boneless skinless chicken breasts, cubed
14 ounces Italian diced tomatoes, undrained
2 medium potatoes, peeled and cut into 1/2-inch cubes
5 medium carrots, chopped
3 celery stalks, chopped
1 large onion, chopped
1 medium green pepper, chopped
7 ounces mushrooms, sliced, drained
2 low-sodium chicken bouillon cubes
2 teaspoons Splenda
1 teaspoon chili powder
1/4 teaspoon pepper
1 tablespoon cornstarch
2 cups cold water

Recipe Directions for Chicken Stew

  1. Blend all ingredients in slow cooker except the water and cornstarch. Mix cornstarch and water together and pour into stew ingreadients.

  2. Cook on low 8-10 hours.
