Chicken and veggies in a light gravy

Recipe Ingredients for Chicken stew

2 medium potatoes
6 oz carrots
190 g chicken breast
1 1/2 oz onion
1 1/2 oz red bell pepper
1 1/2 oz green bell pepper
1 1/2 oz yellow bell pepper
1 T olive oil
1 T all-purpose flour
1 c low-sodium chicken broth
6 oz green beans

Recipe Directions for Chicken stew

  1. Preheat oven to 425. Cut potatoes and carrots into 3/4" bite-size chunks. Spritz a baking sheet with olive oil cooking spray, then spread carrots and potatoes in a single layer and place in oven.

  2. Cut chicken into 3/4" bite-size pieces. Place the olive oil in a medium sauce pan, and brown chicken chunks.

  3. Add onion and bell peppers to chicken pot, cook until veggies are soft.

  4. Sprinkle the chicken mixture with flour, and cook for a minute or two.

  5. Add chicken broth and bring to a boil while stirring to release the brown stuff on the bottom of the pan. Add green beans, and reduce heat to low.

  6. When potatoes are golden, and carrots have softened, remove from oven and add to chicken mixture. Serve.
