Recipe Ingredients for Chicken stew and dumplings

3 lbs chicken (cooked)
2 lbs. potatoes
2 lbs. carrots (however you prefer)
1 onion chopped
2 tbs minced garlic
3 stalks celery
32 oz. chicken broth
1 tsp salt
1/2 tsp pepper
1 1/2 cups whole grain flour
2 tsp. baking powder
1 tsp salt
1 egg (slightly beaten)
1/2 cup(milk, rice milk, broth)
1/4 cup olive oil
1 tsp vinegar

Recipe Directions for Chicken stew and dumplings

  1. slow cook a whole chicken with 1/4 onion, 1 Tbs garlic and a few carrots when fully cooked remove chicken from cooker leaving the juices, remove chicken from bone and return to the cooker.

  2. now add sauteed onion, garlic, celery along with chopped or diced carrots and potatoes, if time is a factor precook the potatoes and carrots, add seasonings and broth, fill crock pot to desired level with water to increase number of servings. Let crock come to simmer or boil whichever your pot does, then add dumplings: dumpling mix is like that of biscuit dough, drop from a tablespoon or 1/4 measure cup making as many servings as you need for the meal, most likely there will be 10 to 12 biscuits; let simmer with lid on crock pot for 20 minutes or until dumplings are done looking, they will flake with a fork.
