Italian chicken and squash with quinoa

Recipe Ingredients for Chicken and squash

44 ounces Boneless, skinless chicken breast tenderloins
3 medium Squash, Summer, Zucchini, Includes Skin
2 medium (2-1/2" dia) Onions
2 cup, diced Mushrooms, Portabella
3 clove Garlic
1 serving Extra Virgin Olive Oil
1 cup Quinoa
4 tsp Perfect Pinch Seasoning

Recipe Directions for Chicken and squash

  1. Heat o2tbsp olive oil in large skillet.

  2. Add garlic and cook for 1 minute.

  3. Add onlon and cook until starting to get tender.

  4. Add squash and mushrooms, sprinkle with 2tsp italian seasoning and cook 5-10 minutes.

  5. In separate pan, heat 1tbsp olive oil and good 1-2 cloves of garlic for 1 minute.

  6. Add cubed chicken and 2tsp italian seasoning.

  7. Cook until no longer pink.

  8. Add chicken to squash mixture and stir.

  9. In separate pot, cook quinoa according to package directions.

  10. Portion chicken mixture into containers.

  11. Portion quinoa in separate containers.
