Pasta shells filled with a mixture of Ricotta, Chicken and Spinach

Recipe Ingredients for Chicken Spinach Stuffed Shells

7 oz large pasta shells (about 24 of "Creamette Jumbo Shells")
8 oz cooked, diced chicken breast
2 cups reduced fat shredded mozzarella cheese (or italian blend cheese), divided
3/4 cup shredded parmesan cheese
6 oz frozen chopped spinach, thawed and drained
3/4 cup fresh mushrooms, chopped
8 oz fat free ricotta cheese
2 cloves garlic
1 1/4 tsp oregano
16 oz pasta sauce, any variety

Recipe Directions for Chicken Spinach Stuffed Shells

  1. Heat oven to 350F. Spray 11x7-inch glass baking dish with cooking spray.

  2. Cook and drain pasta as directed on package (omitting salt).

  3. In medium bowl, stir ricotta cheese, 1 cup of the Mozzarella or Italian cheese blend, the spinach, garlic, and oregano until well mixed.

  4. Gently stir in mushrooms and diced cooked chicken.

  5. Spread about 3/4 cup of the pasta sauce over bottom of baking dish.

  6. Gently spoon chicken mixture into each pasta shell.

  7. Arrange shells, filled sides up, on sauce in baking dish. Pour remaining pasta sauce over stuffed shells.

  8. Spray 15-inch piece of foil with cooking spray; cover shells with foil.

  9. Bake 40 minutes. Uncover; sprinkle with remaining Mozzarella and Parmesan cheeses.

  10. Bake uncovered 5 to 10 minutes longer or until cheese is melted.
