Recipe Ingredients for Chicken Spinach Roll Up Thingies

1 lb chicken breast
3 oz prosciutto
10 oz frozen spinach
1/4 cup grated parmesan cheese
3 tbsp olive oil
1 can chicken broth
2 tbsp lemon juice
1 tsp salt
1/2 tsp pepper

Recipe Directions for Chicken Spinach Roll Up Thingies

  1. 1 lb of chicken breast cutlets, pounded uniformally thin (about 1/4 inch thickness), season with kosher salt and pepper.

  2. Thaw and drain frozen spinach, pressing as much moisture as possible from it. Toss in 1 tbsp of olive oil.

  3. Layer 1 thin slice of proscuitto on underside of each pounded chicken cutlett. Top proscuitto with an even, thin layer of spinach. Top spinach with a light sprinkling of grated parmesan cheese.

  4. Starting with the tapered end of the cutlet, roll the chicken up and secure with a toothpick.

  5. Heat remaining 2 tbsp olive oil in a large skillet (over medium-high heat). Sear the chicken roll ups on each side for about 2-3 minutes to gain a nice brown. Remove from pan.

  6. Gently loosen brown bits from bottom of pan before adding chicken broth and lemon juice & stir. Re-add chicken rolls. Cover and simmer until chicken is cooked through (about 10-15 minutes).

  7. Remove chicken to a serving platter. Simmer sauce until reduced to about 2/3 (about 5-8 minutes). Remove toothpicks from chicken & top with the sauce reduction.

  8. Serve & Enjoy!
