Perfectly healthy quiche, made with egg substitute, chicken, spinach, and fat-free sour cream. Low cholesterol, low in saturated fat, and GREAT taste - all for about 60 calories each! Great for a fast breakfast.

Recipe Ingredients for A+ Chicken Spinach Quiche

12 oz Fit & Active egg substitute (equivalent to 6 eggs)
3/4 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dill
1/4 tsp ground red pepper
12 oz fat free sour cream
6 oz cooked chicken tenderloin , cubed
6 oz frozen spinach, thawed & squeezed dry
2 tbl green onion, chopped fine
1/3 cup seasoned bread crumbs
3/4 cup reduced fat shredded cheddar cheese

Recipe Directions for A+ Chicken Spinach Quiche

  1. Preheat oven to 325-degrees.

  2. Combine egg substitute, seasonings, and sour cream in large bowl. Mix until well-blended.

  3. Add cubed chicken, spinach, and onion and mix well.

  4. Spray 9-inch square baking pan with non-stick cooking spray.

  5. Sprinkle bread crumbs evenly in bottom of pan. Sprinkle cheddar cheese evenly over bread crumbs.

  6. Pour egg-chicken mixture into pan.

  7. Bake for 30 minutes or until toothpick inserted in center comes out clean.

  8. Cut into triangles and serve; or cool and store. (TO CUT INTO TRIANGLES: cut into 4 squares. Cut an "X" in each square.) Stores well in airtight container in refrigerator. Also freezes well.
