Recipe Ingredients for Chicken Spinach Quiche

6 eggs
6 oz cooked chicken tenderloin , cubed
6 oz frozen spinach, thawed & squeezed dry
2 tbl green onion, chopped fine
3/4 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dill
1/4 tsp ground red pepper
12 oz light sour cream
1/3 cup seasoned bread crumbs

Recipe Directions for Chicken Spinach Quiche

  1. In medium bowl, whisk eggs, set aside

  2. In large bowl, combine chicken, green onions, spinach, and seasonings. Add eggs and stir until well blended.

  3. Spray 9X9 inch square pan with non-stick spray. Sprinkle seasoned bread crumbs evenly over bottom.

  4. Pour egg mixture over bread crumbs and gently spread evenly in pan.

  5. Bake @ 325-degrees until toothpick inserted in center comes out clean, about 30-35 minutes.

  6. Cut in triangles. Serve 2 per person. (75 calories each!)

  7. TO CUT TRIANGLES: Cut in 4 squares. Cut an "X" in each square to make 16 triangles. FOR APPETIZERS: cut each triangle in half diagonally, resulting in 32 small triangles (37.5 calories each!!)
