Chicken Parmesan without the pasta and without the breading!

Recipe Ingredients for Chicken Spinach Parm

2 lbs chicken breasts
28 oz diced organic tomatoes
3 cloves garlic
4 tbs fresh basil
2 tbs fresh oregano
4 cups mushrooms
2 small onions (shallots preferred)
8 cups fresh spinach
4 oz Italian cheese blend

Recipe Directions for Chicken Spinach Parm

  1. In a large skillet, saute sliced mushrooms, diced garlic and onions in a small amount of butter or EVOO until caramelized. Drain diced tomato can of excess fluid before pouring tomatoes into skillet with basil, oregano and any other Italian seasoning to taste. Simmer marinara mix for at least 15 minutes.

  2. Meanwhile, preheat the oven to 350 degrees. Remove chicken breasts from packaging and fillet breasts in half (to yield six pieces) horizontally to make breasts thinner. Season meat with pepper, salt and garlic powder. Tenderize by pounding chicken breasts in between wax paper or in a freezer gallon size zip-lock bag. Fry chicken in a separate pan on medium heat for approx 6-7 mins per side.

  3. Spray a large 9x13 casserole dish with cooking oil and place all of the spinach leaves into the dish. Take the chicken breasts and place them evenly across the bed of spinach. Pour the marinara mix onto the chicken and top with the shredded cheese mixture. Bake in oven for additional 15 minutes.
