Recipe Ingredients for Chicken and Spinach Omelette

4 eggs
100 g low fat cheese
10 g shallot
200 g Spinach
100 g Boneless Skinless Chicken Tenderloins
100 g capsicum
1 mushroom
2 cloves garlic
20 g peanut oil

Recipe Directions for Chicken and Spinach Omelette

Fry chopped garlic and shallots in oil. Add diced tenderloins. Add chopped spinach. Cook until reduced in size. Sprinkle chopped mushrooms and capsicum evenly on top. Add beaten eggs while heating, and then sprinkle cheese on top. When egg is cooked, place under griller to cook top until golden brown
