Chicken, Spinach, and Mushroom Enchiladas

Recipe Ingredients for Chicken, Spinach, and Mushroom Enchiladas

252 gram tortillas
1 1/2 tbsp olive oil
8 ounces mushrooms
1 large red onion
12 ounces spinach
4 ounces chicken breast (cooked and shredded)
4 ounces fat-free feta cheese

Recipe Directions for Chicken, Spinach, and Mushroom Enchiladas

  1. Preheat oven to 350

  2. Heat oil in large saucepan and add mushrooms. Stir constantly until browned.

  3. Add 3/4 onions and continue cooking until the onion is translucent.

  4. Add spinach and chicken and stir continuously until spinach wilts. Salt to taste. Turn off heat and cover to keep warm.

  5. Arrange tortillas on a cooking sheet and spray some oil lightly on both sides. Stack in groups of 2 and put in the oven for about 3 minutes.

  6. Take the tortillas off of the cooking sheet and onto a warm plate in one stack. Cover with kitchen cloth to keep warm.

  7. Take one tortilla and dip in enchilada sauce and place on a plate. Spoons about 2 tablespoons of the chicken filling into the tortilla and wrap so seam is facing down. Repeat with 2 more tortillas making serving of 3 enchiladas.

  8. Top with 1 ounce of crumbled feta, the remaining onions and some cilantro. Pour about 1/4 cup of enchilada sauce over the enchiladas and serve immediately.
