Chicken Spinach Enchilada. Serve with black beans as side.

Recipe Ingredients for Chicken Spinach Enchiladas

6 oz. boneless skinless chicken breast
1/2 cup chopped cilantro
1/2 cup baby spinach
1 red bell pepper
1 cup Parmesan cheese
2 cups mozzarella cheese
12 corn tortillas

Recipe Directions for Chicken Spinach Enchiladas

  1. 1. Bake chicken breast in oven at 350 for 30 minutes. When finished, cut into thin strips.

  2. 2. In a large bowl combine cilantro, spinach, roasted red bell pepper, chicken, and 1 cup parmesan cheese and 1 cup mozzarella cheese.

  3. 3. Lightly fry/coat tortillas in skillet over medium heat in vegetable oil--this will soften tortillas and make them easier to roll. (I skip this step, but its what the recipe says.)

  4. 4. Roll tortillas with filling and place in baking dish.

  5. 5. Sprinkle remaining mozzarellacheese over enchiladas.

  6. 6. Bake at 400 for 10 minutes
