Recipe Ingredients for Chicken and spinach Enchiladas

3 cup, chopped or diced Chicken, Breast, Meat Only
16 oz Sour Cream
20 oz Spinach
4 cup Shredded Cheese
4 tbsp chopped Onions
4 tsp Garlic
2 serving Ground Cumin Spice
20 serving Mission Foods, Mission Flour Tortillas, Soft Taco, 8 Inch
20 oz Old El Paso Sauce Green Chile Enchilada Mild

Recipe Directions for Chicken and spinach Enchiladas

  1. pre heat oven to 350 lightly greese with pam 1 9X 13 glass baking dishes.

  2. in large bowl mix together shredded chicken , sour cream, spinach, and 1 cup of cheese, minced onion and garlic, cumin and some salt and pepper.

  3. spoon mixture into each tortilla role and palce seam down in pan.

  4. pour 1 can of sauce over the top of 1 pan then other can over the other pan.

  5. sprinkle remaining 3 cups of cheese over the pans.

  6. bake at 350 for 30 min.
