Chicken and spinach enchilada with red sauce

Recipe Ingredients for Chicken & Spinach Enchiladas

8 oz Chicken
4 serving 2% Milk Reduced Fat Mild Cheddar
1 large Onions
11 tortilla 7" Yellow Corn Tortillas 12ct
1 medium raw Bell Pepper Red
8 oz Neufchatel
12 oz Spinach
2 tbsp Chili Powder
3 clove Garlic
14.5 oz Tomatoes Whole Peeled

Recipe Directions for Chicken & Spinach Enchiladas

  1. Red sauce: 1/2 onion, whole roasted red pepper, can of whole tomato in the food processor until smooth.

  2. Enchiladas: in processor, blend neufchatel, thawed spinach, chili powder and garlic.Add chicken until chicken is chopped. Fill tortilla with mixture. Place seam side down in a 9X13 greased pan. Bake at 400for 20 muinutes Add cheese to top. Bake for another 20 minutes. Let sit 10 minutes.
