Chicken and Spinach Enchilada with Cream Cheese

Recipe Ingredients for Chicken and Spinach Enchilada

10 oz chicken breast
5 oz neufchatel (or can use cream cheese)
4 oz sour cream
10 oz Sauce, La Victoria, La Victoria Enchilada Sauce
10 oz spinach (be sure to drain if using canned)
6 oz cheese
8 flour tortillas
1 salt and pepper to taste

Recipe Directions for Chicken and Spinach Enchilada

  1. Use pre-cooked chicken. You can use left over chicken. Shred in bowl using forks.

  2. Mix in nefchatel, sour cream, spinache, 4 oz of cheese, enchilda sauce (leave a little bit to layer bottom of pan.

  3. Spoon mix into tortillas and roll where seems are face down.

  4. Spray bottom of 13x9 pan. Add in enough sauce to cover. Place rolled enchiladas in pan cover in el pato sauce and remaining cheese.

  5. Bake 350 for about 30 minutes.
