A tasty dish perfect for brunch or dinner. Usually serves 4-6 (I serve larger pieces if I'm making this for dinner.)

Recipe Ingredients for Chicken, Spinach, and Cheese Crustless Quiche

6 large eggs
8 oz spinach, thawed and squeezed dry
8 oz Fat Free shredded cheddar cheese
8 oz Reduced Fat shredded mozzarella cheese
10 oz Tyson grilled chicken strips (or cooked chicken breast, cubed)
1 cup chopped onion
1 cup sliced mushrooms
2 tsp ground black pepper

Recipe Directions for Chicken, Spinach, and Cheese Crustless Quiche

  1. Preheat oven to 375 degrees.

  2. Spray a 9-inch pie plate or casserole dish with non-stick cooking spray

  3. In a large skillet, saute onions for 1-2 minutes until soft.

  4. Add in spinach and saute until moisture has evaporated.

  5. Add in cooked chicken breast.

  6. In mixing bowl, lightly beat eggs and then add most of each type of cheese (reserve a little of each type as a "topper").

  7. Add in ground pepper.

  8. Add in mushrooms.

  9. Add Chicken, Spinach, Onion mixture.

  10. Pour into pie dish and bake about 45 minutes or until done (quiche is done when a knife inserted into the middle comes out clean).

  11. Remove from oven and top with the remaining cheese.

  12. Place back in oven until cheese melts.
