Recipe Ingredients for Chicken and Spinach Casserole

2 lbs boneless skinless Chicken
1 can Cream of Mushroom
1 cup Sour Cream
8 oz Fancy Shredded Sharp Cheddar Cheese
12 oz low sodium Chicken Broth
16 oz frozen Spinach
70 g Ritz Crackers
1 cup Shredded Parmesan

Recipe Directions for Chicken and Spinach Casserole

  1. Thaw and drain spinach

  2. Shred Chicken and mix with spinach

  3. Mix sour cream, cream of mushroom, chicken broth and shredded cheese. Season with salt and pepper to taste

  4. Mix Sour cream mixture with chicken mixture. Pour into a prepared 13x9 pan.

  5. Crush 1 roll of Ritz crackers; mix with 1 cup shredded parmesan. Sprinkle on top of casserole.

  6. Bake uncovered at 350 for 20 minutes until top is golden brown.
