Recipe Ingredients for Chicken Spinach Alfredo

1 lb penne pasta, cooked and drained
1 lb boneless skinless chicken breasts
1 large onion
3 cloves garlic
2 cups part skim ricotta cheese
10 oz. frozen spinach
2 cans cream of mushroom soup
1 cup half and half
1 cup fat free half and half
4 tbsp. butter
1 cup parmesan cheese
3 cups mozzarella cheese

Recipe Directions for Chicken Spinach Alfredo

  1. Boil chicken breasts in water along with the onion & garlic. Drain liquid off and save solids. Cut chicken into large chunks.

  2. Micro the spinach for 8 minutes. Cool and squeeze bone dry. Mix with the ricotta.

  3. Make alfredo by combining soup, half and half, butter, and parmesan cheese. Spread a layer of alfredo in bottom of 2 8x8" or 1 9x13" pan. Then layer the penne, chicken mixture, ricotta mixture, and mozzarella. Repeat layers. Bake at 350 for 45 minutes or until bubbly. This freezes well.
