I just had these ingredients on hand, so I created this recipe. I have no idea what it will taste like. I put that this serves 8--this serves my family (2 adults 4 kids) plus enough for seconds and possibly lunch for hubby.

Recipe Ingredients for Chicken in spicy tomato-pepper sauce

1 lb chicken breasts
1 tsp salt
1 tsp black pepper
1 tsp olive oil
1 tbsp garlic
1/2 cup onion, chopped
1 cup red bell pepper, chopped
1/4 cup vegetable broth
2 cups tomato sauce
1/2 tsp red pepper flakes
1/4 cup parmesan
1 lb penne pasta

Recipe Directions for Chicken in spicy tomato-pepper sauce

  1. Flatten out chicken breasts with meat mallet (for even cooking).

  2. Heat oil in pan. Pan fry chicken in oil until golden on both sides. Put on an oven safe plate, cover with foil and place in 300* oven.

  3. In same pan, sautee onions & peppers, until tender. Add garlic and cook for another min. Add broth to deglaze pan. Stir in tomato sauce & pepper flakes. Reduce heat and simmer (cover with tilted lid if needed) while pasta water is heating. Boil pasta according to package directions.

  4. Combine pasta & sauce. Plate pasta on dish and add chicken breast. Garnish with parmesan. Serve.

  5. *can also cut chicken into pieces or strips & mix in with pasta for more of a family style dinner.
