Recipe Ingredients for Chicken and Spaghetti Squash Tetrazini with Sweet Potatoes

6 cups Spaghetti Squash
3 Sweetpotato
1 tbsp Extra Virgin Olive Oil
1 tsp Black Pepper
1 tsp Salt
1 tbsp Butter or Margarine
1/2 medium Red Pepper
1/2 medium Green Pepper
1/2 Yellow Pepper
1 small Onion
2 cups Broccoli Florets
1 stalk Celery
3 tbsp Flour
1 cup 1% Milk
2 cups Low-Sodium Chicken Broth
1 tsp Celery Seed
1 tsp Oregano
2 tbsp Fat-Free Sour Cream
2 tbsp Lemon Juice
2 cups Roasted Chicken Breast
4 tbsp 100% Parmesan Grated Cheese Light

Recipe Directions for Chicken and Spaghetti Squash Tetrazini with Sweet Potatoes

  1. Preheat oven to 375F. Cut Spaghetti Squash in half lengthwise, remove seeds and guts, and place open side down on an aluminum foil covered baking sheet, and place in oven (bottom rack) for 35 min or until flesh is soft. Cut Sweet Potatoes into small (bite size) pieces, toss in olive oil, add salt and pepper, then spread out on aluminum foil covered baking sheet, and add to oven (top rack) for 1 h or until pieces soft.

  2. Meanwhile, chop peppers and onions into small pieces, broccoli florets into bite size pieces, and celery into thin strips. Melt butter in large saucepan on medium heat, add broccoli florets first for about 5 min, then add the remainder of the veggies, stirring until onion soft. Add flour slowly, ensuring that it is properly mixed in. Add milk, chicken broth, celery seed, and oregano, and cook over medium heat for 20 min, stirring regularly. Add lemon juice and sour cream, and remove from heat.

  3. Scoop spaghetti squash flesh into a large casserole dish, top with chicken, sweet potato pieces, and sauce, then sprinkle parmasean cheese evenly over top. Place in oven (still at 375) for 30 min.
