Quick week night main dish, cleaned up from a decadent recipe involving condensed soups and Velveeta cheese (YEESH). The olives and parmesan cheese provide a little saltiness.

Recipe Ingredients for Chicken Spaghetti

1 1/2 cups cooked chicken meat
1/2 cup diced celery
1/2 cup chopped bell pepper
1/2 cup diced onion
1 cup sliced button mushrooms
3 tbsp olive oil
1 tsp minced garlic
2 tsp chili powder
1/2 tsp cayenne pepper
1 Black pepper to taste
2 tbsp flour
1 1/2 cup chicken stock, fat free
8 oz tomato sauce
1 cup fat free sour cream or yogurt
1/4 cup chopped black olives (opt)
8 oz spaghetti, cooked
1/4 cup parmesan cheese

Recipe Directions for Chicken Spaghetti

  1. Boil spaghetti by package directions.

  2. Sweat vegetables in olive oil. Add flour and stir well. Add chicken stock, tomato sauce, sour cream, and seasonings. Simmer to thicken. Stir in chicken meat and spaghetti; serve with salad and French bread.
