A cheesy, creamy chicken and spaghetti casserole. Good for entertaining or as a pot-luck dish.

Recipe Ingredients for Chicken Spaghetti

1/2 cup bell pepper, diced
1/2 cup olive oil
1 medium onion, diced
28 ounce chicken broth
10 1/2 ounce condensed cream of mushroom soup
10 1/2 ounce condensed cream of chicken soup
3 cups chicken, diced and cooked
283 gram Ro-tel tomatoes
340 gram thin spaghetti
1/2 pound mozzerella
1 pound mushrooms
3 ounces pitted black olives
1/2 cup raw cilantro

Recipe Directions for Chicken Spaghetti

  1. In a large skillet or pot, saute bell peppers, onions, mushrooms, and garlic (to taste).

  2. Add one can of chicken broth and the chicken. Simmer until chicken is tender.

  3. Add all soups and Ro-tel tomatoes. Stir and simmer for 15 min.

  4. Cook spaghetti in boiling water until 'al-dente'. Do not overcook.

  5. In a large baking dish (3 qt. at least) combine the chicken mixture and spaghetti. Add chopped cilantro.

  6. Stir well and bake for 30 min. at 375 degrees. Top with black olives.
