Recipe Ingredients for Chicken Spaghetti Casserole

2 cups chicken breast (cooked & chopped)
2 cups whole wheat spaghetti (uncooked, broken into 2-inch pieces)
1/2 cup celery (sliced 1/4 inch thick)
1 cup red bell pepper (chopped)
1 cup onion (chopped)
1 cup chicken broth (fat free, low sodium)
1/2 tsp salt
1/4 tsp black pepper (freshly ground)
21 1/2 oz cream of mushroom soup (reduced sodium, fat free)
1 cup cheddar cheese (shredded, divided)

Recipe Directions for Chicken Spaghetti Casserole

  1. Preheat oven to 350

  2. Combine chicken, spaghetti, celery, red pepper, and onion in a large bowl

  3. Combine broth, salt, pepper, and soup in a medium bowl, stirring with a whisk

  4. Add broth mixture to chicken mixture

  5. Coat 2 8-inch (2 qt) baking dishes with cooking spray

  6. Divide mixture evenly into two baking dishes

  7. Sprinkle 1/2 cup cheese over each casserole

  8. Coat foil with cooking spray

  9. Cover with coated foil

  10. Bake 35 minutes at 350 degrees

  11. Bake additional 10 minutes uncovered
