A low fat hearty chicken soup -- good as a main dish. You can cook the chicken with the soup, rather than pre-cook it, but doing so will result in a cloudier soup.

Recipe Ingredients for Chicken Soup with Vegetables

600 g celery
285 g onion (can use frozen)
280 g carrots (sliced or use baby carrots)
450 g potatoes (with skin)
6 c water
4 c chicken broth (ready-to-serve)
1/2 tsp black pepper
1/2 tsp garlic powder
24 oz cooked chicken

Recipe Directions for Chicken Soup with Vegetables

  1. Place everything but the chicken in a large pot.

  2. Cook for about 1 hour

  3. (if adding matzo balls or dumplings do it here, after the initial cooking)

  4. Add chicken

  5. Simmer for about 15 minutes
