Chicken Soup with Turkey Meatballs & Escarole

Recipe Ingredients for Chicken Soup with Turkey Meatballs & Escarole

8 cups chicken stock, low sodium
2 cups water
2 large carrots, diced
1 head of escarole
1/2 large onion, diced
1/2 cup celery, diced
1/4 cup macaroni
16 ounce ground turkey, low-fat
4 cloves garlic, minced
1/4 cup onion, minced
1 cup bread crumbs, plain
1 cup water

Recipe Directions for Chicken Soup with Turkey Meatballs & Escarole

  1. In a medium bowl, stir together 1 cup water and plain bread crumbs, 1/4 cup minced onion and minced garlic.

  2. Let stand 5 minutes.

  3. Add in ground turkey and mix well.

  4. Form 1 to 1-1/2" diameter meatballs using wet hands and place on a cookie tray in the refrigerator to chill for 30 minutes.

  5. In a large pot bring to boil 8 cups of low-salt chicken stock and two cups of water.

  6. Add in carrots, onion and celery and turkey meatballs.

  7. Bring to a boil again and cook for 10 minutes.

  8. Lower the heat, add in Escarole and macaroni and cook another 30 minutes.
