Recipe Ingredients for Chicken Soup

1 tablespoon oil
1 onion (chopped)
1 carrot (chopped)
1 stalk celery (chopped)
4 cups chicken broth
1 1/2 lb chicken breast, raw, boneless, skinless
2 tablespoons miso
1 cup cooked rice

Recipe Directions for Chicken Soup

  1. Heat the oil in a sauce pan.

  2. Add the onions, celery, carrots, plus whatever herbs you like and saute on medium heat until tender, about 5 minutes.

  3. Deglaze with chicken stock (1 cup or so) and set all aside.

  4. Cook the chicken..

  5. Deglaze again with with rest of chicken stock.

  6. Add the cooked rice and veg back in.

  7. Remove from heat and mix some of the broth into the miso paste in a bowl and pour it back into the soup.

  8. Alternatively after sauteeing the veg, you could throw everything including chicken (cooked or not) in a crockpot with maybe another cup of water and cook on low for like 8-10 hours.
