hearty vegetable filled chicken soup - low carb

Recipe Ingredients for chicken soup

8 oz chicken, rotisserie, skin removed, cut up
1 cup carrots, chopped
1 cup onion, diced
1 cup mushrooms, diced
1 cup celery, chopped
1 cup broccoli, chopped
4 cups chicken broth

Recipe Directions for chicken soup

  1. Strip meat off of chicken, break into bite size pieces. Discard skin & bones

  2. dice onion, carrot, mushroom, celery and broccoli. saute in a shallow pan with 1/2 cup of broth until tender.

  3. combine chicken and vegetables in a stock put - add remaining broth.

  4. Add salt, pepper, celery seed, oregano, poultry seasoning and red pepper flakes to taste.

  5. Simmer for 30 minutes - serve, or cool and place in tupperware for future lunches
