Recipe Ingredients for chicken soup

1 cup, chopped Carrots
1 stalk, medium (7-1/2" - 8" long) Celery
2.5 cup Fat Free Chicken Broth
0.25 cup, chopped or diced Chicken, Thigh, Meat Only
39 1/2 grams Rice, White, Long-grain, Regular, Cooked
0.5 cup, chopped or diced Chicken, Breast, Meat Only
1 cup, chopped or diced Chicken, Breast, Meat Only

Recipe Directions for chicken soup

when purchasing whole chicken, use parts not normally served such as back, boil covered in water, refrigerate separating bones/meat from broth, after they have cooled (overnight) skim fat off of broth, pick over bones removing meat, add sliced peeled carrot, celery and onions, cook for 1 hour, add 1/4 cup of rice cook about 20 minutes more. I always add a little cayenne pepper as well as regular pepper and basil prior to cooking all ingredients.you may also use up leftover chicken or add to this for a meatier soup
