1 unit is the meat from 1 pound of a whole chicken, bone and skin removed. I had to put it in like that to accurately count the calories. So this just means use roughly a 4.5 pound whole chicken or equivelant

Recipe Ingredients for chicken soup

4 1/2 units Whole Roaster Chicken Fresh
2 large carrots
1 large onion
8 ounces fresh spinach, chopped
1 cup radishes, chopped
1 cup red cabbage, chopped
1 large tomato, chopped
2 medium red potatoes, chopped
1 cup chopped broccoli
1 cup chopped cauliflower
1 cup frozen peas
8 ounces mushrooms, roughly chopped
1 small apple, peeled and chopped
1 lemon pepper to taste
1 thyme to taste

Recipe Directions for chicken soup

  1. In a very large soup pot, boil the chicken in just enough water to cover it about 1 inch until it is about to fall off the bone. Carefully remove from pot and allow to cool. Do not throw out the water. Allow to cool NOT IN THE FRIDGE! You want the fat to rise to the top. It cools too quickly in the fridge and the fat will be locked in the broth.

  2. Debone the chicken, and remove all the fat and skin. Roughly chop into bite sized chunks. You can freeze the bones to make soup later or discard. Skim the fat off from the top of the cooled chicken water (broth).

  3. Return the chicken to the pot and add the carrots, potatoes, broccoli, cauliflower, radishes and apple. Bring to a low boil for about 20 minutes.

  4. Add the remaining vegetables and simmer for at least another 20 to 30 minutes. Season to taste. I personally do not add salt, and the nutrition facts for this recipe reflects that. If you add salt you will need to compensate for that. Great served alone or with dumplings, sandwiches, etc
