Thick and hearty Chicken and Vegetable Soup

Recipe Ingredients for Chicken Soup

1 lb Chicken
12 oz Onion
1 lb Swede
1 lb Carrot
5 oz Mushrooms
8 oz Celery
6 oz potato
5 oz leek
14 oz tinned tomatoes
30 fl oz Chicken stock
8 oz Peas
1 tbsp Vegetable Oil
1 tsp Garlic

Recipe Directions for Chicken Soup

  1. Chop onions, mushrooms and galic finely

  2. Finely slice leeks

  3. Grate potato, carrot and swede.

  4. If chicken is raw, cook through in some of the stock, then cool

  5. Roughly shred cooked chicken

  6. Sweat the onions and garlic in the oil until slightly coloured.

  7. Add the Carrot and Swede and sweat briefly more

  8. Add the tinned chopped tomatoes

  9. Add the chicken stock and simmer gently for 20 minutes,

  10. Taste and adjust the seaoning.

  11. Add the potato and leek and mushrooms and simmer for a further 10 minutes

  12. Add the chicken and simmer for another 10 minutes.

  13. Taste, adjust the seasoning and serve
